HEALTHY LOW-CALORIE RECIPES for Snacks or Meals!

This home-made Cauliflower Soup (I know it sounds disgusting, but Oh my goodness..... just sooo devine and thick & creamy (but no cream!) ..... And, no nasties!




The bonus is, it's only 69 calories per 250ml (1 cup)! I make up a batch on the weekends (around 2 litres), store in vacuum sealed glass jars in the fridge, and it's a perfect portion to re-heat for a quick warm snack, or to have mid-afternoon after my shake! A great idea to save time, and stay healthy! Cauliflower is a Superfood too, and so, so good for you! Cauliflower is considered a superfood because of its nutrient-rich content. It is high in fiber, and vitamins B and C. It also contains high concentrations of carotenoids (antioxidants) and glucosinolates. Ingredients... Organic Chicken Stock, one Cauliflower head, home-made vegetable stock paste / seasoning (full of delish goodies I make up once every few months and freeze for easy flavour when I cook), Herb Salt & Cracked Pepper, and a touch of Olive Oil! Tip: Some nights when I feel like only a light meal, I have a larger serve, and add around 100g of Premium Marinara Mix... OMGosh, Seafood Chowder-like, sooo filling, and a fraction of the fats and calories of traditional Seafood Chowder (and no cream!!).
